What can be bought in many sizes, has the ability to save time in the kitchen, and makes clean up a breeze while providing a balanced meal in just one pot? Why, the Crock Pot of course!
I’m a firm believer in easy prep, easy clean-up, set it and do something else while your dinner (or dessert) is cooking. You’ll thank yourself later when you come back to your camper after a day of hiking, fishing or doing whatever it is you do.
With the aroma of a succulent meal filling your nose, go ahead and take it in. Yes, the dog is muddy and the kids are dirty, but what a great day it was and, after all, dinner is done!
After cleaning everyone up, doggie included, why don’t you sit down to a nice, warm plate of what I like to call “lazy Hobo dinner.” Campers, you recognize the reference as the traditional foil dinner or hobo dinner I’m sure, but alas, put it all in the crock pot sans foil and no hot coals needed!
When only Kyle and me are on the open road, I bring the 2 quart crock pot I got at Amazon https://amzn.to/2NX24uC but when Jon or the adult boys go with, well, then it’s bring the big granddaddy one or starve!
Crock Pot HOBO Dinner for 2
2 Potatoes regular size (or 3-4 red potatoes)
washed, peeled & cubed
½ lb. Ground Beef uncooked.
Use the other ½ lb. for tacos the next night
6-10 Baby Carrots whole or cut in half
14.5 Ounce can Beef Stock/Broth
1 tsp. Garlic Salt
1 tsp. Onion Powder (or ¼ – ½ an onion)
¼ – ½ Cup A-1 Steak Sauce
2-4 Tbsp. Real Butter (Fat is Flavor!)
Salt & Pepper to taste
Now the hard part (no, not really) – dump everything into the crock pot, any order, mix it up, put the lid on.
Set on low for 6-8 hours.
Now go outside and play!
Serve with a slice of buttered bread…mmmm…now that’s good eats!
* For a creamier gravy finish:
substitute 1 10.5 Ounce can of Mushroom soup mixed with ½ can of water
